Before refrigeration, people had to find a way of preserving meat longer than its natural shelf life. Piper St Food Company presents their Full Day Charcuterie which explores the principles of salting and curing.

Over a day you will make a pork terrine, link your own sausages, turn pieces of pork shoulder into rillettes and even salt down belly pork to make your own bacon.

This class will give you the basic skills every Charcuterie needs to get started.

The classes run from 10:00am until 3:30pm.
