Owner/chef John Snelling has done his time in city restaurants, spending 13 years at Cafe di Stasio, one of Melbourne's top fine-dining spots. His own venture benefits both from this experience and from the wealth of quality produce on his doorstep in the Gippsland region. The Outpost is a great place to relax and observe the languid country charm of Noojee and the Latrobe River, while sampling the region's expertly handled produce, from Noojee trout to Tarago River cheeses and native spices.
