Get ready to embrace Embrasse Restaurant, the new kid on the block in the Carlton fine-dining scene. Having opened in January, 2009 in the old home of Three One Two and Mrs Jones, this stylish restaurant is the labour of love of French chef Nicolas Poelaert, who infuses his penchant for quality Australian produce and passion for the kind of rustic French cuisine he grew up with back home into his menu. Indeed, Poelaert brings to Embrasse a modern, worldly edge from his experiences working at places such as the three-Michelin-star restaurant, Bras in France, and locally lauded establishments Vue de Monde and Circa.

Based on the seasons, the menu comes up roses with the inclusion of floral extracts and earthy herbs, as in the poached pork fillet with barley, oat gateau, potato veloute, golden raisin and fresh Sichuan pepper, or the gourmand tomato salad with herbs, flowers and vegetable puree and emulsions. Sensuous sides include the Aligot cheesy mash potato sourced from the south of France, while delicious desserts feature fresh berries from Poelaert's garden.
