| Stroll down Waratah Lane in Chinatown then up a wide set of stairs to be transported back in time through the ornate doorways of Manchuria. This dimly lit saloon has a classic 1900s opium den style, with tables and couches enclosed within thin wafers of dark wood or hanging curtains of chiffon and beads. Disco lyrics waft through the air to set a delicious and deliberate contrast to the vintage decor.
Manchuria is all about classic cocktails made with quality ingredients. The emphasis on old-world classics is a philosophy of simplicity and balance - less ingredients and more booze, a balance of flavours and less fruity razzle dazzle. One of the lesser-known classics that the good people at Manchuria will encourage you to try is the Jack Rose, which is made with apple brandy, house-made grenadine and lime juice. The cocktail list includes a history of each vintage drink to help educate those hungry for some booze background.
The focus on quality runs through the wine list and the boutique beers, as well as the 40-something whiskies available, including the Bakery Hill single malt from Tasmania. If you're peckish, the staff will organise some excellent Chinese nibbles including a super sang choy bao or some Peking duck.
