Now presenting his considerable talent beside a placid lake in the glorious surroundings of Stillwater at Crittenden, he uses free-range, local produce for his seasonal menus. Try the black fig and Red Hill goats' curd wrapped in prosciutto and baked with an apple balsamic glaze; and the aged peninsula prime Angus eye fillet with fondant potato, watercress, roasted tomato, Swiss brown mushrooms, crispy fried onion rings and a red wine jus. To follow, the Callebaut Belgian chocolate pudding served warm with ganache sauce and Ricketts Point vanilla bean ice cream is a good sweet option. Stillwater also serves a delicious platter with a selection of local cheeses like Gippsland Blue with a fig and apricot compote, Maffra Clothed Cheddar and quince paste and Jindi Brie with truffled honey served with muscatels, crackers and lavosh. |
