The Immersery: Festival Kitchen, Bar and Raingarden
Dates: 28 Feb 2014 - 16 Mar 2014
Address: Queensbridge Square, Southbank Promenade, Southbank, Victoria 3006
Celebrate the wonder of water at the Festival's spectacular hub anchored to the Yarra River in Queensbridge Square; a bustling riverside meeting place and home to Victoria's most inspiring food, wine and cocktails over 17 days.
Perched on the Yarra's edge overlooking the city skyline, take a seat by the open kitchen to dine on a menu created by top local chefs Florent Gerardin (Silo), Jesse Gerner (Añada & Bomba), Daniel Wilson (Huxtable & Huxtaburger), Joel Alderson & Adam Liston (Borrowed Space), and Hamish Nugent & Rachel Reed (Tani Eat & Drink), each taking culinary inspiration from water. The many states of water transform our food experience, carry our produce to distant shores and link us to tastes around the world.
Move throughout the multiple levels to marvel at the raingardens and learn how to harness rain water to grow plants and food, while understanding more about the globe's most precious resource.
By night, step onto the riverside bar for magical cocktails and a selection of wines, including Seppelt, celebrating the three states of water - liquid, solid and gas - crafted by boundary-pushing bartenders.
