The Fermentary is an award-winning producer of naturally fermented, artisan food and beverages. Staunch advocates of traditional fermentation techniques that focuses on local ingredients and slow minimal intervention fermentation. Visit by appointment to view their production, or for cellar door sales. A diverse range of weekly workshops is offered on weekends throughout winter.

Situated in an old abattoir just outside of Daylesford, The Fermentary is intent on reinvigorating both your pallet and your gut whilst regenerating a community with connections and symbiotic relationships between farmers, customers and the restaurants and stores that support them.
